CHICKEN CHINTHAMANI
Chicken chinthamani is a Tamil nadu famous starter which goes well with any rice items like sambar rice, rasam rice, curd rice or it can be had simply mixed with plain rice too. This starter needs only two main ingredients other than chicken. Simple to prepare yet delicious to relish. To go recipe when you are out of much ingredients or just lazy :-P

Cooking Time: 30 mins.
INGREDIENTS:
. Gingelly oil - 1 1/2 tbsp
. Small Onion / shallots : 100 gms (chopped finely)
. Red chilly : 7-8 nos. as per spice level (deseeded and cut into small pieces)
. Chicken : 100 gms. (boneless pieces cut into small bite size is best for this recipe)
. Turmeric powder : 1/2 tsp.
. Salt : as per taste
. Water : 1/2 cup.
Method of making:
1. Peel the shallots and chop it finely and deseed the red chillies and cut into small pieces.
2. Heat gingelly oil in a frying pan. Add the small onions/shallots and saute well.
3. Add the red chillies saute it.
4. Add the chicken.
6. Add salt saute well and till the water from chicken dries out.
7. Add water and let the chicken cook well till the added water dries out.
8. Chicken chinthamani is ready to be served.
