HOME STYLE TOMATO BIRIYANI


This home style tomato biriyani with freshly ground masala will taste too good  without any vegetable/meat in it.

Serves : 3
Preparation time: 15 minutes 
Soaking Time : 15 - 20 minutes
Cooking Time : 30 minutes

INGREDIENTS :
. Seeraga samba rice :2cups
. Oil/coconut oil : 3 tbsp
. Bay leaf : 2
. Big onion Sliced : 1 no.
. Ripe Tomatoes sliced: 5-6 large/7-8 small
. Handful of mint and coriander leaves        
chopped 
. Turmeric powder : 1/2 tsp
. Salt : as per taste 
. Water : 3 cups
FOR MASALA
. Small onion: 4-5 nos. 
. Ginger : 1 inch
. Garlic : 1 whole
. Cashew: 3-4 nos. 
. Red chilly : 6/according to your spice level
. Fennel seed: 1 tspn
. Poppy seeds: 1/2 tsp
. Cardamom : 3 nos
. Cinnamon : 1/2 inch
. Cloves: 2nos.

STEPS:

Prepare 
Add the mentioned ingredients for Masala in mixer and grind to fine paste 
In a pressure cooker heat oil and add bay leaf 
Add chopped onions 
Add freshly ground Masala paste 
Add chopped mint and coriander leaves 
Saute till raw smell goes 
Add tomatoes 
Add Turmeric powder 

Cook till tomatoes turn mushy
Add water, salt and let it boil. 

Add rice and mix 
Close the pressure cooker 
Keep the flame at the lowest 
Cook for 15-17 mins and turn off the flame 
Before opening the cooker lid let it rest for 5mins 
After opening mix gently and serve it. 
Note
. If tomatoes are sour add ONE pinch sugar. 
. Instead of red chilly you can use chilly powder. 
. You can add ghee instead of oil. 
. You can skip Cashew if not available. 
. You can also use basmati rice instead of seeraga samba rice.
