PICKLE FLAVOURED TOMATO THOKKU
Pickle flavoured tomato thokku is my mom's special recipe which is one of my all time favourite dish. This thokku can be made and stored in fridge for 1 week. A small quantity of thokku is enough for a plate rice. It also goes well with idli and dosa.
Serving: 3-4 for 1 time
Preparation time: 15 mins.
Cooking time : 25-30 mins.
Ingredients:
Ripe tomatoes : 5 small and 1 large
Turmeric powder: 1/4 tsp
Salt: as per taste
FOR TEMPERING:
Gingelly Oil: 2-3 tbsp
Mustard seeds : 1 tsp
Curry leaves : few
For DRY roasting:
Mustard seeds: 1/2 tsp
Curry leaves : 4-5 leaves
Dry red chillies: 5-6 (as per spice level)
Coriander seeds: 1 tbsp
Asafoetida : 1 tsp
Cumin : 1 tsp
Pepper: 1 tbsp
Fenugreek : 1/2 tsp
Raw rice: 1 tsp
Toor dhal: 1 tsp
Bengal gram: 1 tsp
Instruction:
1.Heat a kadai dry roast the spices mentioned one by one.
2. After roasting let it cool down and grind it in mixer jar to a fine powder. Also puree the tomatoes.
3. Heat gingelly oil in kadai. Add mustard seeds and let it splutter.
4. Add curry leaves and fry it.
5. Add the tomato puree, turmeric powder and salt. Mix it. Allow it to cook till raw smell goes.
6. Now add the masala powder and mix well. Cook till oil separates slightly.
7. Now the pickle flavoured thokku is ready.
