BADUGA STYLE CHICKEN CURRY / BADUGARU KOI UDAKKA
Our next recipe is Baduga style chicken curry. Base of this curry is small onion/ shallots.
They use a all purpose special masala powder which is gives a unique flavour to the curry.
Here I have used store bought masala powder soon will upload the recipe for the masala powder (Badugaru koi maasudi).
Servings: 3-4
Preparation Time: 15- 20 mins
Cooking Time : 30 mins
Ingredients:
Small Onion/Shallots : 250 gms.(you need a lot for this curry as its the only base)
Ginger : 1/2 inch
Garlic : 1 whole
Coconut oil : 5 tbsp
Mustard Seeds: 1 tsp
Turmeric powder : 1 tsp
Chicken : 1/2 kg
Water as per consistency
Baduga Masala powder 2-3 heaped tbsp
Salt as per taste.
Instruction:
1. Heat oil in a kadai and add garlic and ginger fry till golden brown.
2. Now in the same oil add shallots/ small onion and fry till golden brown.
3. Now add the fried onions, ginger, garlic and the masala powder in mixer jar let it cool and grind it to a fine paste.
4. Heat oil in a pressure pan, add mustard seeds let it splutter and now add sliced small onion and fry it.
5. Now add chicken and turmeric powder and mix well. Allow the chicken to cook in its own water and let it dry.
6. Now add the masala paste. Mix add salt and water as per required consistency. Pressure cook for 3 whistle or as per your cooker capacity and meat.
7. Now the curry is ready to be served.
